Thymus serpyllum 'Vey' Vey Thyme: Evergreen perennial, Ht. 3cm. Small pale pink flowers in summer. Small green leaves. Decorative and aromatic. Good for ground cover and planting in gravel. Trim back after flowering.

Evergreen perennial. Ht. 3cm. Attractive pink flowers in summer. Dark green leaves which form a dense carpet. Good for paths, lawns and walls.

Thymus pseudolanuginosus Woolly Thyme: Evergreen perennial, Ht. 5 cm. Pale pink/mauve flowers for most of the summer. Grey/green hairy leaves. Plant in gravel or rockeries. Hates wet ground.

Get Your Garden Buzzing!

Uses:

Thyme is an aid to digestion and helps to break down fatty foods. It is one of the main ingredients of bouquet garni, and is good, too, in stocks, stews and marinades. A sprig or two with half an onion makes a great herb stuffing for chicken.

Thymes also have strong antiseptic properties. An infusion or tea makes gargle or mouthwash and is an excellent remedy for sore throats, infected gums and hangovers.

Caution: do not take thyme medicinally when pregnant.

Bouquet Garni :

1 bunch parsley               

3 sprigs upright thyme    

1 clove garlic peeled       

2-3 bay leaves                   

                                                   

Tie the herbs together with a long piece of string, so that  they can easily be removed from the casserole or stew at the end of cooking. Or tie the herbs in a muslin bag attached to a long piece of string. Add the bouquet garni at the start and leave in the dish for 2 hours.

Herb Butter:

2 tbsp thyme leaves,      

chopped                           

125g (4oz) unsalted       

butter                                 

                                           

Remove the leaves of the thyme by rubbing your fingers up and down the stems. Once removed, chop up to release leaf oils, then mix with the soft unsalted butter, using a fork to blend. When thoroughly mixed, pack the butter into a roll of greaseproof paper and place into the refrigerator for up to 24 hours to set.
